Tapioca Custard is surprisingly easy to make. Takes me a total work time of 10 min, and it is so worth it!

What is Tapioca?

Tapioca is a starch extracted from the cassava root. It doesn’t have much nutritional value. Is used mainly as a thickening agent (gluten-free) in cooking and baking.

Ingredients

1/2 cup dry whole tapioca pearls
3 cups milk
1/4 cup sugar
dash of salt
2 whole eggs whipped very well
1 spoon of vanilla (optional)

Instructions

  1. Soak half a cup of pearls in hot water for at least half an hour.
  2. Drain off excess water
  3. Whip eggs in separate bowl.
  4. Cook pearls with milk, sugar and salt, stirring constantly, in a non-stick pot or pan for a few minutes, till boil.
  5. Pour some of the boiled mixture into the whipped eggs, stirring quickly and constantly.
  6. Add egg mixture back to pot/pan and boil a few minutes, till arrives at the consistency you like. The longer you cook, the thicker the texture.
  7. Add vanilla. Yum.
